Pepper Prawns

Overview

Delicious, quick and easy prawns made in just 10 minutes – these prawns have a wicked peppery sauce made from Jamaican spices and chilli. A real authentic recipe, it’s a favourite in the Caribbean, and always goes down well.

In Jamaica, street sellers sell them fresh in a plastic bag. Known by the locals as “swimmers” or “pepper swims,” they’re cooked in the shell for a juicier texture. Whether you’re a shell-on or shell-off person, no matter! The flavours are fantastic either way.

Ingredients

  • 1 tbsp vegetable oil
  • Half onion diced
  • 3 garlic cloves, finely chopped
  • 1 scotch bonnet peppers, deseeded and chopped (add more if ya bad)
  • 25ml Guys Dinner Jam
  • 450g raw shell-on prawns
  • Juice of 1 lime
  • 1 tsp freshly ground black pepper
  • 1 tsp all-purpose seasoning
  • Half tsp paprika
  • 15g parsley leaves, finely chopped
  • 1 tbsp lemon juice
  • Lemon wedges, to serve

Method

Heat the oil in a frying pan. When hot, add the onion, garlic, Guys Dinner Jam and scotch bonnets and cook over a medium heat for 5 minutes.

Wash the prawns with lime juice and water and trim the legs and antennae if you prefer. Add to the pan and cook for 2-3 minutes, stirring regularly. Add the black pepper, all-purpose seasoning and paprika. Stir and cook for a further 2-3 minutes.

Add the parsley and lemon juice and cook for a further 2 minutes, then serve with lemon wedges.
