Curry Tofu

Overview

Previously an outlier, Tofu is now a mainstay in many restaurants around the UK. Yet despite Ital culture it’s not usually seen in Caribbean cuisine.

This Tofu recipe intends to embrace the versatile protein source into our culinary family and is set to make taste buds pop! Tofu gets a bad rep for being bland, but as well as being a healthy protein alternative, tofu is quick, easy to cook and as with meat, when seasoned it can be really tasty.

Ingredients

  • 280g firm tofu
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 4 garlic cloves, chopped 1 tbsp curry powder
  • 1 tsp freshly ground black pepper
  • 1 tsp grated fresh ginger
  • 2 tsp Guys Dinner Jam
  • Large handful of fresh thyme sprigs- leave whole and follow the instructions.
  • 3 spring onions, sliced
  • 2 large tomatoes, diced
  • 1x 400ml can of coconut milk

Method

*Tip* Boiling tofu in salt water is a traditional East Asian method to enhance its texture and improve the absorption of marinades through the process of osmosis. Cut the tofu into 2-3 cm cubes and bring 470ml of water to a simmer with 1 teaspoon of salt. Add the tofu and gently simmer for 2-5 minutes. This firms the tofu, removes excess water, and prepares it to absorb marinades and flavours. Drain the tofu, pat it dry, and it’s ready to go! (add Guys Dinner Jam here)

In a large frying pan, heat the olive oil, add the onion and cook down for 5-7 minutes over a medium heat until soft. Add the garlic and cook for another minute.

Throw in the curry powder, along with the black pepper and ginger. Cook until browned, then add the scotch bonnet, thyme, spring onions and tomatoes and stir. Add the coconut milk and stir again.*Tip* Pierce the scotch bonnet with a knife and add whole to the curry while simmering to let the flavours of the Pepper seep into the curry. You can keep tasting and remove the pepper when the spice is to your liking.

Add the cubed tofu to the pan and simmer for 10 minutes before serving alongside some plain rice or roti.
